Egg Free Cherry Ice Cream Recipe

A particularly hot summer in Washington State means we can’t get enough ice cream! This recipe by Coryanne of our Kitchen Council is particularly great because it relies on the sweet flavors of Stemilt cherries, comes together in no time at all and, because it is egg-free, is the perfect homemade ice cream for those with egg allergies or diet restrictions. Enjoy!

No Egg Cherry Ice Cream by Coryanne Ettiene BOn a hot summer day the last thing I want to do is wait around for homemade ice cream. Yes, frozen custard is amazing, so creamy, so rich, but really, on a hot day with three children eager for a scoop of ice cream, I need a no-cook option that will allow us dive into fresh homemade ice cream in minutes. The biggest difference with an egg-free ice cream, apart from the no cook prep time, is the consistency. Egg-free ice cream is a bit more delicate, slightly thinner and sets harder – making it ideal for a soft serve approach to dishing it out.

With Stemilt’s sweet cherries in season, and with a bottle of simple cherry syrup in my fridge, this cherry ice cream is like summer in a single scoop. So sweet, so tart and so fragrant that you will want to make two batches because the first will be gone in a blink of an eye. If you think it is great on its own, try it in a milkshake…amazing!

This recipe for no-egg ice cream can be ready in minutes, and is so simple you can sit back and let the little chefs in your kitchen take charge.

No Egg Vanilla Cherry Ice Ceam By Coryanne Ettiene

Egg Free Cherry Ice Cream

Ingredients:

  • 2 cups of heavy whipping cream
  • 1 1/2 cups of whole milk
  • 1 + 1/3 teaspoon of vanilla extract
  • 1/3 cup of water, warm
  • ½ cup of cherry syrup
  • 1 cup of stewed Stemilt cherries, pitted and cooled
  • Pinch of salt
  • ¾ cup of white granulated sugar

Procedure:

  1. In a large mixing bowl add the water and sugar and stir to dissolve the sugar.
  2. Mix in the milk, cream and vanilla, stirring well to combine the ingredients before adding the cherry syrup and salt. Stir for 2-3 minute to ensure that all the ingredients are fully combined.
  3. Add the contents of the mixing bowl to an ice cream maker. Once it gets to the soft serve stage, add half of the stewed cherries and allow it to churn until the cherries are equally blended.
  4. Finish by pouring the soft serve ice cream into a freezer safe container and topping with the rest of the stewed cherries. Serve immediately or allow it to set until hard in the freezer.
